Bramley Cider

Having had a quick read of the info from Rose I must say that the Bramley can be made into a top class Cider, you need to let the apples sit until late December - early January before pressing, the resulting Cider needs to be racked after fermentation and then cork it down hard for at least 12 months, it is superb when breached and well worth the wait.
