From Fred Beech (LARS Ann Rept 1950 p 146).... "Kingston Black eventually developed a brown head 18 days after pressing. However the head that formed was very thin and loose and the juice underneath was not brilliant". The other juices in his study (Sweet Alford, Bulmers Norman and Red Foxwhelp) keeved heavily within 1 - 3 days. Note that Red Foxwhelp is a bittersharp with a quoted pH of 3.3. in his study. Yet it keeved OK. He attributes this to a larger quantity of (natural) enzyme being present - in those days pure PME was not available to add.

Q which one of the two enzymes am I using. I think it must be Crystalzme because it has proved to be effective at a low pH.

A Yes, that's the Crystalzyme AES. The other PME that is available in North America, Novoshape, works satisfactorily as well (to which Andrew may attest) but has a lower activity level. As with the Klercidre a different amount is required in order to achieve the same results.

I'm also happy to report that Yarlington Mill seems to be particularly reliable for keeving with PME after maceration. A second year of trials with this variety is underway in my cellar. Separation of the pectin gel is quite apparent in every one of ten trial vessels (though with a heavier pectin load it takes quite some time for the cap to be lifted in most of the batches). Blends of Yarlington Mill with other juices are showing mixed results (roughly 50% success so far) though it's too early to say for certain. One thing that cannot be emphasized enough in keeving is that patience is a virtue. G Awdry
